Papaya Seed Dressing
This recipe for Papaya Seed Dressing is a variation of my fruit dressing recipe. My friend Carol gave me the inspiration for this recipe and introduced me to using papaya seeds in dressings. These dressings will keep for several weeks in the refrigerator.

This is a salad that I dressed with the Papaya Seed Dressing. It contains fresh papaya, cucumbers, radishes, jerk smoked chicken thighs, plantain chips and pan-roasted shishito peppers. Papaya Seed Dressing

1/2 cup chopped fresh papaya
1 Tablespoon papaya seeds
1/2 cup rice wine vinegarΒ
1/2 cup granulated sugar
1/2 cup canola oil
1/4 cup chopped yellow onionΒ
1/2 teaspoon Kosher salt
1/2 teaspoon dry mustard

- Combine all the ingredients in a blender and mix until smooth.
