Papaya Seed Dressing

This recipe for Papaya Seed Dressing is a variation of my fruit dressing recipe. My friend Carol gave me the inspiration for this recipe and introduced me to using papaya seeds in dressings. These dressings will keep for several weeks in the refrigerator.

Papaya Salad

This is a salad that I dressed with the Papaya Seed Dressing. It contains fresh papaya, cucumbers, radishes, jerk smoked chicken thighs, plantain chips and pan-roasted shishito peppers. I served it with a side of Tostones (aka Batakons). See my recipe for Plantain Chips and Tostones and watch the video on how to make them.

Papaya Seed Dressing

Ingredients

  • 1/2 cup chopped fresh papaya

  • 1 Tablespoon papaya seeds

  • 1/2 cup rice wine vinegar 

  • 1/2 cup granulated sugar

  • 1/2 cup canola oil

  • 1/4 cup chopped yellow onion 

  • 1/2 teaspoon Kosher salt

  • 1/2 teaspoon dry mustard

Directions

  • Combine all the ingredients in a blender and mix until smooth.
