Watermelon Mojito
What could be more refreshing than a Mojito? Answer: A watermelon Mojito. This has always been one of my favorite cocktails on a hot summer evening, not that we have many of them here in Maine. I over-winter my mint plants in my greenhouse, so I have a constant supply of fresh spearmint for this cocktail and for some of my favorite Thai food. Enjoy!
Watermelon Mojito

1/2 cup fresh spearmint leaves
4 teaspoons granulated sugar (or 2 packets of Splenda)
2 limes
1/4 cup diced seedless watermelon
1/4 cup Monin watermelon syrup
3/4 cup light rum
1 cup club soda
- Garnish: (optional)
2 small watermelon wedges
2 sprigs fresh spearmint
Directions
- Place the mint and sugar in a mortar and “muddle” it with a pestle. Squeeze in the lime juice and add half of the watermelon. Lightly crush the watermelon.
- Pour the mixture into a cocktail shaker and add the watermelon syrup and light rum and shake to mix. Pour in the club soda.
- Place 4 large cubes of ice in two tall highball glasses and divide the drink equally between them.
- Garnish each glass with the remaining diced watermelon, watermelon wedge and a sprig of fresh mint.
