Watermelon Mojito

What could be more refreshing than a Mojito? Answer: A watermelon Mojito. This has always been one of my favorite cocktails on a hot summer evening, not that we have many of them here in Maine. I over-winter my mint plants in my greenhouse, so I have a constant supply of fresh spearmint for this cocktail and for some of my favorite Thai food. Enjoy!

Ingredients

  • 1/2 cup fresh spearmint leaves

  • 4 teaspoons granulated sugar (or 2 packets of Splenda)

  • 2 limes

  • 1/4 cup diced seedless watermelon

  • 1/4 cup Monin watermelon syrup 

  • 3/4 cup light rum

  • 1 cup club soda

  • Garnish: (optional)
  • 2 small watermelon wedges

  • 2 sprigs fresh spearmint

Directions

  • Place the mint and sugar in a mortar and “muddle” it with a pestle. Squeeze in the lime juice and add half of the watermelon. Lightly crush the watermelon. 
  • Pour the mixture into a cocktail shaker and add the watermelon syrup and light rum and shake to mix. Pour in the club soda.
  • Place 4 large cubes of ice in two tall highball glasses and divide the drink equally between them. 
  • Garnish each glass with the remaining diced watermelon, watermelon wedge and a sprig of fresh mint.
